Roasted Butternut Squash with Hemp Hearts
- 1-2 lbs of peeled and cubed butternut squash
- 2 Tbsp of extra virgin olive oil
- 1 shallot minced (although we usually like extra)
- 3 cloves of garlic minced
- ¼ cup of pepitas
- ¼ cup of hemp hearts
- ¼ cup of chopped pecans
-Preheat the oven to 400°F and line a large baking sheet with parchment paper.
-Place the squash cubes on the baking sheet and drizzle with olive oil and pinches of salt and pepper. Roast for 15 to 20 minutes.
-Once the squash has been roasted about halfway, mix in the shallots, garlic, pepitas and hemp hearts for another 15-20 minutes.
